• The Poison Apple: tomatoes and water celery chè
• Saint-Jacques: scallop panacotta, roasted cauliflower, preserved lime and osmanthus sauce
• The Mad Apple: eggplant, fermented bean curd, peanut butter
• Aphrodisiacs: musselrulee, bobo risotto, fermented shrimp
• Fairy Rings: banh bo with puer tea, com ruou sorbet, reishi mousse, homemade mushroom garum
• Theobroma: palm fruit compote, coconut mousse, whisky coffee sabayon
