The Legend of the Termite Mushroom
The Termite Mushroom (Termitomyces) is a true wonder of the natural world. Unlike many fungi, these cannot be farmed by human hands. They exist only where they are cultivated by termite colonies in a delicate, subterranean dance. They are a gift from the wild, appearing only when the humidity and soil temperature are exactly right.
To us, they represent the ultimate expression of "terroir"—a flavor that is inextricably linked to the earth from which it grew.

Crafting the Jam
To honor such a rare ingredient, we wanted to preserve its essence in a way that intensified its natural characteristics. We began by slow-simmering hand-foraged termite mushrooms, allowing their natural moisture to evaporate until we were left with a concentrated, umami-rich "jam."
The result is a texture that is both silky and substantial, carrying notes of roasted nuts, damp earth, and a surprising, lingering sweetness that only wild mushrooms possess.
