"The Beginning" was conceived as a tribute to the early morning dew—that fleeting moment when the air is crisp and the scents of the earth are most potent. We wanted to create a dish that felt alive, cooling, and intellectually stimulating. To achieve this, we leaned into two powerhouse ingredients that define the dish's identity: Emerald Melon and Betel Leaf.

The Magic of the Betel Leaf
In many cultures, the betel leaf is a symbol of hospitality. In "The Beginning," we use it as a structural and flavor-balancing element. When julienned finely, it releases an earthy, medicinal warmth that prevents the dish from being "just a fruit salad."
