At Spice Canvas Atelier, every dish is a chapter, and our latest Dessert Tasting Menu, "Spellbound," was designed to take our guests on a sensorial journey across Vietnam. Today, we’re pulling back the curtain on the menu’s grand finale: Theobroma.
At Spice Canvas, we don't just cook; we paint with flavor. To our chefs, every plate is a blank slate, and spices are the vibrant pigments that turn a meal into a masterpiece.
While our pantry is filled with treasures, there is one family of spices that defines our signature depth: Pepper. Forget the dusty shaker on the corner of the table—we’ve sourced seven distinct varieties that bring everything from numbing citrus notes to earthy heat.
In the Spellbound kitchen, we don’t just use spices; we curate experiences. Among the jars of gold and velvet powders lining our shelves, one stands apart. We call Cardamom the "Queen" for a reason. She is one of the world’s most complex aromatics—a tiny green pod that holds a universe of flavor within its dark, resinous seeds.
Our dessert tasting menu begins not with a whisper, but with a strike. Introducing “The Poison Apple,” a dish designed to challenge your expectations and blur the line where savory ends and sweetness begins.
What defines a dessert? Is it merely a high sugar content, or is it the role a dish plays in the rhythm of a meal.
The Saint-Jacques is a testament to our philosophy that fine dining should be an exploration, not just a routine. It requires a departure from expectations and a willingness to let your palate be surprised.
